A great twist on your typical dull old roasted potatoes, these actually have a little zip and zing! They are easy to make and go great with beef, chicken, pork, and just about anything else.

Ingredients
Serves: 6- 2 1/2 to 3 pounds potatoes
- 1 Tablespoon olive or canola oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 5 slices bacon
- 2 cups (about 2 1/2 ounces) grated Cheddar cheese
Preparation method
Prep: 10 mins | Cook: 45 mins1. Set your oven rack to the center position and preheat the oven to 400 degrees F. Grease, spray or line a 9″x13″x2″ baking dish.
2. Wash or (if desired) peel the potatoes. Cut them into 3/4-1″ pieces and place them in a large mixing bowl. Drizzle them with the oil and sprinkle them with the salt and black pepper and cayenne pepper. Toss them well to evenly coat all the pieces, then pour them into the prepared baking dish. Roast them in the preheated oven for 35-40 minutes, or until they are tender.
3. While the potatoes are roasting, dice the bacon and fry it until it’s crisp. Drain the bits on a paper towel.
4. When the potatoes are done, remove them from the oven. Sprinkle them with the grated cheese and bacon bits. Return the baking dish to the oven for more 5 minutes, until the cheese is melted.
