Ingredients

100 g carrots, chopped
100 g celery, chopped
100 g onion, chopped
2 clove(s) garlic, minced
1 tbsp fresh basil leaves, finely chopped
1 tbsp fresh oregano, finely chopped
1 large can(s) red Kidney beans, drained and rinsed – 425g size
1 large can(s) chopped tomatoes, 400g size
150 g green cabbage, coarsely chopped
1 medium courgette, coarsely chopped
75 g soup pasta, orzo or ditalini
salt and fresh ground pepper, to taste

Instructions

Pour 900ml of water into a large pan. Add carrots, celery, onion, garlic and herbs and bring to a boil. Season well and reduce heat. Cover the pan and simmer for about 15 minutes.

Add the kidney beans with tomatoes, cabbage, courgette and pasta. Return to a boil and then reduce heat again. Cover and cook for another 10 minutes or until pasta is al dente.

Serve immediately.
