Minestrone soup recipe details
Ingredients
100 g | carrots, chopped |
100 g | celery, chopped |
100 g | onion, chopped |
2 clove(s) | garlic, minced |
1 tbsp | fresh basil leaves, finely chopped |
1 tbsp | fresh oregano, finely chopped |
1 large can(s) | red Kidney beans, drained and rinsed – 425g size |
1 large can(s) | chopped tomatoes, 400g size |
150 g | green cabbage, coarsely chopped |
1 medium | courgette, coarsely chopped |
75 g | soup pasta, orzo or ditalini |
salt and fresh ground pepper, to taste |
Instructions
Pour 900ml of water into a large pan. Add carrots, celery, onion, garlic and herbs and bring to a boil. Season well and reduce heat. Cover the pan and simmer for about 15 minutes.Add the kidney beans with tomatoes, cabbage, courgette and pasta. Return to a boil and then reduce heat again. Cover and cook for another 10 minutes or until pasta is al dente.
Serve immediately.
