Mincemeat cake recipe details
Ingredients
250 g | flour, self-rising |
350 g | sweet mincemeat |
90 g | dried fruit mix |
3 medium | eggs |
150 g | butter |
150 g | brown sugar |
Instructions
Grease and line a round cake tin. Preheat oven to 160°C.In a bowl combine the flour, sweet mincemeat and dried fruit mix. Add eggs, margarine and soft brown sugar. Beat until well blended.
Spoon into baking tin and sprinkle some brown sugar on top.
Bake for 1hr and 15 minutes until well risen and firm to touch.
Cool in tin for 5 minutes and then turn out on to rack. This cake is very moist and keeps well.
