Minced meat and summer vegetable stew recipe details
Ingredients
| some | beef stock |
| 300 g | minced beef |
| 500 g | tomatoes, peeled and diced |
| 1 medium | courgette, trimmed and sliced |
| 1 | red bell pepper, trimmed and diced |
| 1 large | onion, chopped |
| 3 clove(s) | garlic, minced |
| olive oil | |
| salt and pepper | |
| coriander powder | |
| paprika powder |
Instructions
Heat a little olive oil in a large saucepan and fry the onions along with the diced peppers. When the onions are translucent, add the minced meat and stir-fry until crumbly and browned.Season with salt, pepper and generously with paprika and coriander. Add the tomatoes and the garlic and approximately 100ml of beef stock. Fold in the courgettes, cover with a lid and simmer over low heat for about 15 minutes.
Serve with rice.
