Mexican tuna sandwiches recipe details
An easy to make sandwich blending the flavors of tuna, avocado and chipotle peppers that results in a tasty, lower-fat alternative to the standard tuna salad sandwich. Easily makes six sandwiches. I prefer using “bolillos” (Mexican rolls) but toasted white or whole-wheat bread works well too. Serve with any kind of chips, tomato wedges, celery sticks etc.

Ingredients
Serves: 6- pureed canned chipotles en adobo (to taste)
- 1 large or 2 medium Haas avocados (mashed)
- 3 (6 ounce) cans tuna in water (well-drained)
- 1/2 medium onion (diced)
- 1/2 cup celery (diced)
- 1 tablespoon any fresh lime juice
- 1 teaspoon salt
Preparation method
Prep: 15 mins1. Puree the contents of a can of chipotles en adobo in the blender and set aside.
2. Mash the avocado with a fork until creamy but leave some small lumps.
3. Add drained tuna, onion, celery, lime juice, and salt. Mix until well blended.
4. Mix in pureed chipotles to taste. (refrigerate leftover)
5. Spread on bolillos or toasted bread.
