Mexican chicken and bean stew recipe details
Ingredients
2 | yellow bell peppers, 150g each |
5 | chicken breast fillets, 150g each |
4 tbsp | olive oil |
2 l | chicken stock |
250 g | green bean seeds, canned |
250 g | kidney beans, canned |
250 g | corn, canned |
salt and pepper | |
4 tbsp | sweet chili sauce |
Instructions
Seed and dice the bell peppers. Rinse the chicken breasts with cold water. Pat dry and dice.Heat oil in a pan and sauté the chicken and the bell peppers. Add the chicken broth, bring to the boil and simmer over low heat for 35 minutes.
Drain the beans and the corn and add to the stew. Season to taste with salt, pepper and the chili sauce. Gently simmer for further 10 minutes.
Serve with bread.
