Mexican casserole with beef recipe details
Rice, ground beef, and bacon cooked with vegetables with a semi-spicy tomato sauce. One of my favorites growing up.

Ingredients
Serves: 8- 1 pound ground beef
- 3/4 cup uncooked long grain rice
- 1 1/2 teaspoons salt
- dash pepper
- 2 (8 ounce) cans tomato sauce
- 1 cup hot water
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 1 (12 ounce) can whole kernel corn, drained
- 2 teaspoon chili powder
- 4 slices bacon
Preparation method
Prep: 15 mins | Cook: 1 hour 15 mins | Extra time: 10 mins1. Preheat oven to 375 degrees F (190 degrees C).
2. Brown beef.
3. In an ungreased 2 quart casserole dish, place layer of uncooked rice. Sprinkle with salt and pepper.
4. Pour 1 can tomato sauce and hot water over rice.
5. Add onion and pepper, then layer of ground beef. Sprinkle salt.
6. Top with layer of corn.
7. Add chili powder to remaining can of tomato sauce and pour over corn.
8. Top with bacon.
9. Bake in the preheated oven for 1 hour. Uncover and bake 15 minutes longer or until rice is done.
