Mexican burrito casserole recipe details
Ingredients
8 | ready to cook tortillas |
1 pack(s) | hot Fajita seasoning paste |
3 | bell peppers, cleaned and diced |
2 | onions, chopped |
500 g | chicken breast fillets, cut into strips |
250 g | rice |
250 ml | sour cream |
250 g | freshly grated Cheddar cheese |
1 can(s) | corn |

1 clove(s) | garlic, minced |
salt and pepper | |
chilli powder |
Instructions
Cook the rice.Meanwhile, heat the oil in a large skillet. Sauté the onions until translucent. Add the meat and stir-fry until golden. Add the bell peppers and stir-fry for another minute. Add the cooked rice and the corn. Add the hot Fajita paste and stir until well combined. Check seasoning and adjust with salt pepper and chilli powder. Set aside.
Preheat the oven to 180°C.
Stir the garlic into the sour cream. Place the 8 tortillas onto the working surface and spread each tortilla with the cream. Then spoon a heap of the rice mixture onto each tortilla, roll up and place the rolls side by side into a baking dish. Spoon the remaining rice mixture on top. Sprinkle with the cheese and bake until the cheese has melted and is golden.
