8 corn tortillas
8 eggs
Olive oil or butter
Canned salsa or fresh chopped tomatoes, parsley, cilantro, and onions with a little fresh lemon or lime juice
Instructions:

Do the eggs first, either American Embassy Paris Scrambled Eggsor some other fashion (fried or poached).

Put a flat tortilla on the plate, cover with eggs, and drizzle a little salsa on top. Roll the other tortilla and place on the plate as extra “bread”. Garnish with fresh fruit and breakfast meat if desired.
