Ingredients:
Mild salsa or picante sauce
8 eggs
Salt and pepper to taste
Shredded mozzarella or Monterey Jack cheese
Freshly grated Parmesan cheese
Dry or fresh cilantro
Toasted English muffins or thick slices of bakery bread, toasted
Instructions:

Spray 8-cup muffin tin with no-stick Mazolaoil. Place 3 Tablespoons salsa or picante sauce in each muffin cup. Crack an egg in each cup over salsa or picante sauce. Salt and pepper each egg. Sprinkle shredded mozzarella or Monterey Jack cheese over egg. Sprinkle Parmesan on top of shredded cheese. Sprinkle cilantro over Parmesan. Bake in 350-degree oven for 20 to 25 minutes. Serve on toasted English muffins or on toasted halves of thickly sliced bakery bread. Spoon extra sauce in the muffin cups over eggs before serving.
