Medium Curry Powder recipe

|5 large||dried red chillies, roughly chopped|
|2 tbsp||coriander seeds|
|2 tbsp||cumin seeds|
|1 tsp||whole cloves|
|2 ½||cm piece cinnamon, break into smaller pieces|
|1 tsp||ground ginger|
|¼ tsp||ground fenugreek|
Dry-fry the whole spices in a heavy-based saucepan over a low heat for about 3 mins or until fragrant, set aside and allow to cool completely.
Once cool, grind to powder and mix with turmeric, ground ginger and ground fenugreek.
Makes about 6 tablespoons. Store in an airtight container. Easily keeps 3 months.
