Medium curry powder recipe details
Ingredients
5 large | dried red chillies, roughly chopped |
2 tbsp | coriander seeds |
2 tbsp | cumin seeds |
1 tsp | whole cloves |
2 ½ | cm piece cinnamon, break into smaller pieces |
1 tbsp | turmeric |
1 tsp | ground ginger |
¼ tsp | ground fenugreek |
Instructions
Dry-fry the whole spices in a heavy-based saucepan over a low heat for about 3 mins or until fragrant, set aside and allow to cool completely.Once cool, grind to powder and mix with turmeric, ground ginger and ground fenugreek.
Makes about 6 tablespoons. Store in an airtight container. Easily keeps 3 months.
