Mediterranean salmon fillets recipe details
Ingredients
400 g | salmon fillets |
300 g | baby green beans, frozen |
200 g | grape tomatoes |
handful | kalamata olives, pitted |
1 | red capsicum, cut into strips |
45 g | flatfillet anchovies in extra virgin olive oil, chopped |
2 | onions, cut into wedges |
4 clove(s) | garlic, chopped |
6 tsp | extra virgin olive oil |
sea salt and black pepper | |
some | dried rosemary |
some | dried thyme |
1 | lemon, halved |
Instructions
Add beans to rapidly boiling water, bring to the boil again and blanch for one minute. Drain.Prick tomatoes with a sharp knife.
Toss together in a casserole dish green beans, tomatoes, olives, capsicum, anchovies, onions, garlic and oil and season with salt, pepper, rosemary and thyme. Place the lemon halves in opposite corners. Rub the salmon with salt and pepper, place in the middle of the dish and sprinkle with oil.
Bake in a fan-forced oven (180 Celsius) for about 20 minutes or until the fish is just cooked through and still moist.
Serve with crispy fresh bread, pasta or rice.
Note:
Try it with other vegetables of your choice. Very nice e.g. with spinach or fennel.
