Mediterranean salad recipe details
Ingredients
750 g | potatoes, small |
2 tbsp | sun dried tomato paste |
3 tbsp | olive oil |
2 tbsp | vinegar, red wine |
225 g | red peppers, roasted |
12 small | tomatoes, baby plum or cherry |
2 tbsp | capers, drained |
some | basil leaves |
Instructions
Cook the potatoes in lightly salted simmering water for about 15 – 20 minutes until tender.While the potatoes are cooking, mix the tomato paste, olive oil, and red wine vinegar together in a large bowl and season.
Drain the potatoes well and then add them to bowl and stir to coat in the dressing. Leave to cool for ten minutes.
Tear the roasted pepper into the bowl and add the tomatoes, olives and capers. Mix everything together and then serve scattered with a few fresh basil leaves.
