Mascarpone cream with strawberries recipe details
Ingredients
1 | orange |
4 tbsp | sugar |
2 tbsp | Cointreau or Grand Marnier |
500 g | strawberries |
250 g | mascarpone |
200 g | whipping cream |
4 | biscuits, crumbled |
Instructions
Squeeze the juice and grate some peel off the orange. You need approximately 100 ml of juice.In a thick-bottomed saucepan caramelize 2 tablespoons of sugar until golden brown. Deglaze with the orange juice and stir in the liqueur and a teaspoon of orange peel. Cook stirring until the sugar has dissolved, then take from heat and allow to cool down.
Set aside 4 strawberries. Hull the remaining strawberries, cut them in small pieces and combine the fruits with the cooled orange-caramel. Allow to soak for 20 minutes.
Whisk the cream until stiff. Cream together the mascarpone and 2 tablespoons sugar and fold in the whipped cream. Fill half of the cream into 4 dessert glasses. Sprinkle with biscuit crumbles and layer the marinated strawberries on top. Spoon the remaining cream in a piping bag with star nozzle and pipe swirls on top of the strawberries. Garnish with a strawberry.
