Marzipan and orange mousse recipe details
Ingredients
2 leaves | gelatin |
125 ml | milk |
100 g | marzipan |
1 ½ tbsp | orange liqueur |
1 | egg |
100 g | single cream |
1 packet(s) | vanilla sugar |
2 tbsp | orange juice |
To garnish: | |
whipped cream | |
star fruit slices | |
orange zest |
Instructions
Soak the gelatin in cold water. Heat the milk. Dice the marzipan and dissolve it in the milk, stirring frequently. Add the orange liqueur.Separate the egg white from the egg yolk. Stir the egg yolk in the still hot marzipan mixture. Add the squeezed gelatin and dissolve it. Place the marzipan mixture into the fridge for approximately 30 minutes.
Whisk the egg white until stiff. In a separate bowl whisk the single cream with the vanilla sugar until stiff. Fold the single cream into the marzipan mixture, then the beaten egg white. Gently stir in the orange juice. Spoon the mousse into 3 dessert bowls and place into the fridge for at least 4 hours.
Garnish the mousse with a dab of whipped cream, some star fruit slices and a little orange zest.
