Mary's oatmeal pancake recipe details
- Ingredients
- 2 cups rolled oats (not instant)
- 3 cups buttermilk
- 1/2 cups flour
- 1 teaspoon soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 lightly beaten eggs
- 1/4 cup vegetable oil
Mix rolled oats and buttermilk. Cover and refrigerate overnight. In large bowl mix together flour, soda, baking powder, and salt. Add eggs and vegetable oil to the dry ingredients and combine with oatmeal mixture. Heat griddle to 350 degrees and cook pancakes until golden brown.
