Marshmallow mint fudge recipe details
This is a very easy fudge recipe you can prepare using the microwave.

Ingredients
Serves: 25- 1/2 (12 ounce) package milk chocolate chips
- 1/2 (12 ounce) package dark chocolate chips
- 1 (4.2 ounce) package Andes(R) Creme de Menthe candies, chopped OR 1/2 package (5 ounces) Andes(R) Creme de Menthe baking chips
- 3 tablespoons butter
- 1 (14 ounce) can sweetened condensed milk
- pinch salt
- 1 1/2 teaspoon vanilla extract
- 1 cup mini-marshmallows
Preparation method
Prep: 2 hours 10 mins | Cook: 5 mins1. Grease a 9×13 pan either with butter or cooking spray and line with wax or parchment paper. This will make it easier to remove the fudge when cooled.
2. Combine chocolate chips and mints in a microwave safe bowl. Cut butter into small cubes and put on top of chips. Pour sweetened condensed milk over chips and butter and add a pinch of salt.
3. Place bowl in microwave and heat on high for 1 1/2 minutes. Remove from microwave and briefly stir to combine. Heat in the microwave an additional 1 1/2 minutes. Remove, add vanilla extract and stir until uniformly smooth (microwave and additional 30 seconds if mixture is still lumpy and stir again). Fold in marshmallows and stir until they barely start to melt.
4. Pour mixture into pan and spread evenly, dragging the spatula flat across the surface to spread the marshmallows out. Chill in refrigerator for 2 hours then cut into 1-inch squares using a pizza cutter. Best served at room temperature.
