Ingredients
454 g | lean steak mince beef or quorn |
2 large can(s) | chopped tomatoes, or 1 can and some tomato puree |
1 clove(s) | garlic, minced |
100 g | frozen or fresh carrot batons (small sticks) |
100 g | mushrooms, sliced |
1 large | onion, roughly chopped |
2 tbsp | dried Italian herbs, or mixed fresh thyme, oregano and sage |
1 pinch(es) | ground black pepper |
some | Worcestershire sauce, three or four good sloshes |
150 g | dried pasta shapes, I prefer tricolour twists, or wholewheat for healthy option |
1 cube(s) | beef or vegetable stock |
1 glass(es) | red wine, optional if you have a bottle open |
1 tbsp | olive oil, not virgin – just standard |
Instructions
Note:Do not to use virgin olive as it is wasted when heated. Do not use sesame oil as it will go bitter.In a large pan, that can be closely covered, heat oil gently and fry onion, mushrooms and garlic a little until onion is soft. Add mince and brown.
Add all the other ingredients (including the pasta) and some water to cover, give a good stir. Do not add salt. Cover the pan and simmer. Cook until the pasta is just soft, about 20 minutes, and thicken if needed. Taste and add salt/adjust seasoning.
Serving suggestions:Serve with garlic bread and/or a green salad.
Tip:Suitable for freezing, but the pasta does break up when reheated. To avoid that you can use wholewheat pasta, which is more robust.
