Ingredients
2 medium | eggplants |
2 tbsp | Pesto |
3 clove(s) | garlic, chopped |
4 tbsp | olive oil |
some | rosemary needles, chopped |
some | parsley, chopped |
some | chili powder |
Instructions
Cut the eggplants in half and cut each half into 3 pieces; you get long triangle shaped slices.
Mix all the other ingredients together or puree them in a blender. You can add black olives or dried tomatoes if you like.
Marinate the eggplants in this mixture for 30 minutes. Then bake them in the oven for approx 30-40 minutes at 200°C. You might need to sprinkle them with a little olive oil before baking.
