Ingredients
1 | ripe orange, juice and grated rind |
1 | ripe lemon, juice and grated rind |
1 bunch(es) | parsley, chopped |
50 g | almond flakes |
8 | mackerel fillets |
2 bunch(es) | radish, sliced |
1 tsp | wasabi paste |
50 g | crème fraîche |
2 tbsp | milk |
5 tbsp | olive oil |
salt and pepper |
Instructions
Roast the almond flakes. In a bowl mix together the orange juice, half of the lemon juice, half of the parsley, orange and the lemon zest and the oil.Arrange the fish skin side down in a casserole dish. Pour over the marinade. Cover and allow to soak for 2 hours.
Preheat the oven to 200°C. Bake the fish for 5-8 minutes.
Mix together the crème fraîche, wasabi paste, milk, remaining lemon juice, remaining parsley and the radishes. Season to taste with salt and pepper.
Serve the fish on the radish salad, sprinkled with the roasted almonds.
