Ingredients
Serves: 12- 2 cups drained maraschino cherries, drained
- 12 ounces mini chocolate chips
- 1 1/2 cups toasted pecan pieces
- 1 1/2 cups raisins, soaked overnight in cherry wine, if possible
- 2 tablespoons minced grated orange peel
- 4 cups flour
- 1 1/2 cups sugar
- 1 1/2 tablespoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs, at room temperature
- 2 egg yolks, at room temperature
- 1 1/2 cups black cherry juice
- 1/2 cup plus 2 tablespoons melted butter
Preparation method
Prep: 15 mins | Cook: 1 hour 10 mins1. Preheat oven to 350 degrees F and lightly coat 2 large loaf pans with nonstick cooking spray.
2. Combine cherries, chocolate chips, pecans, raisins, and orange zest with 1 cup flour in a bowl. Set aside.
3. In separate bowl, combine and sift sugar, baking soda, baking powder, salt, and remaining flour. Add to the cherry mixture.
4. In small bowl, beat the eggs, egg yolks, black cherry juice, and melted butter. Add to the other ingredients and mix well.
5. Fold in remaining flour and spoon into loaf pans.
6. Bake for 60 to 70 minutes. Cool 15 minutes in pans, then turn onto wire racks and cool completely.
