Breakfast Burritos recipe

- Ingredients:
- 2 medium-sized flour tortillas (6 to 8 inches in diameter)
- 2 eggs
- 1 small potato, microwaved until 80% done
- 1/8 cup milk or cream
- 1/6 cup chopped onion
- 1/6 cup grated cheese (cheddar does well)
- 1 to 2 slices bacon, cooked cubed ham, or crumbled sausage
- 1/4 cup diced sweet bell peppers (red, green, or mix)
- Salt and pepper
This meal consists of a scrambled egg mixture wrapped in a hot, flour tortilla. Serve with orange juice, coffee, fresh tomato slice, and fresh green chili pepper or salsa. This recipe will make enough for two burritos, enough for all but the hungriest person. If you have too much mixture for two tortillas, use three; otherwise, it gets sloppy.
Bake a small potato in the microwave until almost done. Remove, peel, and dice into 3/8- to 1/2-inch cubes. Cut bacon in 1-inch lengths (or crumble equivalent amount of bulk sausage) and cook in hot skillet until almost done. Remove most of the grease, add chopped onion and saute until limp. (If using cooked ham, use a Tablespoon of oil to saute the vegetables, then add the ham.) Add diced potato, stirring occasionally until heated thoroughly.
Mix the eggs and milk, and pour into the skillet with the meat and vegetable mixture. Stir gently until done. Place the egg mixture on the tortillas in a straight line down the center. Sprinkle with salt, pepper, and cheese. Do not over-fill. Wrap the tortillas around the mixture and serve.
Note:The tortilla must be warm or it will not fold. May be wrapped in foil and placed in oven, or moistened slightly and placed between 2 paper towels in the microwave for about 12 seconds.
