Mangetout and roasted pepper salad recipe details
Ingredients
4 | red bell peppers, deseeded, washed, cut into strips or bite-sized pieces |
1 tbsp | olive oil |
350 g | mangetout |
4 tbsp | balsamic dressing |
50 g | pine nuts, toasted |
Instructions
Preheat the oven to 200°C. Arrange peppers on a baking tray and brush with the oil. Roast for 10-15 minutes, until lightly charred.Briefly blanch the mangetout in boiling water, then drain. Rinse under cold water.
Toss the peppers and mangetout in the dressing and sprinkle with toasted pine nuts.
