|300 g||carrots, peeled and thinly sliced|
|2 bunch(es)||basil, chopped|
|40 g||pine nuts, toasted|
|2 clove(s)||garlic, minced|
|2 tbsp||balsamic vinegar|
|6 tbsp||olive oil|
|salt and freshly ground black pepper|
Blanche the mangetout for 3 minutes in salted water.
Whisk the vinegar with the oil. Stir in the garlic. Season to taste with salt, pepper and sugar.
In a large bowl, combine the mangetout with basil and carrots. Pour over the dressing and serve sprinkled with the pine nuts.
