Mangetout and basil salad recipe details
Ingredients
300 g | mangetout |
300 g | carrots, peeled and thinly sliced |
2 bunch(es) | basil, chopped |
40 g | pine nuts, toasted |
2 clove(s) | garlic, minced |
2 tbsp | balsamic vinegar |
6 tbsp | olive oil |
salt and freshly ground black pepper | |
sugar |
Instructions
Blanche the mangetout for 3 minutes in salted water.Whisk the vinegar with the oil. Stir in the garlic. Season to taste with salt, pepper and sugar.
In a large bowl, combine the mangetout with basil and carrots. Pour over the dressing and serve sprinkled with the pine nuts.
