Ingredients
Serves: 4- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 2 cups orange juice
- 2 tablespoons butter
- 1 teaspoon grated ginger root
- 1 teaspoon chopped parsley
- 1 (8 ounce) jar mandarin orange sauce
- 1/2 cup honey
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 boneless skinless chicken breasts, sliced thin
- 1 tablespoon cornstarch
Preparation method
Prep: 15 mins | Cook: 25 mins1. Combine garlic, soy sauce, 1 cup of the orange juice, butter, ginger, and parsley in a large skillet. Cook over medium heat until fragrant, about 5 minutes.
2. Add the orange sauce, honey, onion powder, salt, and pepper, and mix well.
3. Place chicken in the skillet with the sauce and cook over medium heat for about 10 minutes, until the chicken is no longer pink in the center and has reached an internal temperature of at least 165 degrees F.
4. In a medium-sized mixing bowl, whisk the remaining cup of orange juice and the cornstarch until the cornstarch is smoothly blended with the juice.
5. Combine orange juice and cornstarch mixture with chicken and sauce in skillet and cook over medium-low heat until thickened, about 10 minutes.
