Ingredients

Makes: 1 Double-Layer Cake
  • For Cake:
  • 1 (11 ounce) can mandarin oranges
  • 1 (18 ounce) package yellow cake mix
  • 4 eggs
  • 1 cup oil
  • For Frosting:
  • 1 (6 ounce) package instant vanilla pudding
  • 1 (8 ounce) can crushed pineapple
  • 4 ounces Cool Whip(R)

Preparation method

Prep: 20 mins | Cook: 35 mins | Extra time: 2 hours, cooling

1. Preheat oven to 350 degrees F and coat 2 (9-inch) cake pans with nonstick cooking spray.
2. Empty oranges and the juices from the can into the cake mix in a mixing bowl. Mix. Beat in eggs and oil until combined and orange segments have disintegrated.
3. Pour batter into cake pans and bake for 30 to 35 minutes. Do not overbake. Cool.
4. To make icing, empty pudding into bowl. Add pineapples and juices, and stir until it thickens. Fold in Cool Whip(R) and use to frost the cooled cake.
