Man sized sushi plate for two recipe details
With a pound of fish and almost as much rice, this massive plate of sushi is just right for two very hungry sushi fans.

Ingredients
Makes: 24 pieces- 14 ounces Japanese sushi rice
- 2 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 tablespoons mirin sake
- Toppings:
- 4 medium prawns, uncooked
- 3 1/2 ounces raw tuna, sliced
- 3 1/2 ounces raw squid, sliced
- 3 1/2 ounces smoked salmon, sliced
- 3 1/2 ounces red caviar or salmon roe
- Wasabi, soy sauce, pickled ginger, and grated white radish
Preparation method
Prep: 30 mins | Cook: 10 mins | Extra time: 30 mins, soaking1. Cover rice with water by 1 1/2 inches in a saucepan. Let stand for 30 minutes. Then set over medium-high heat. When water boils, turn heat down to low and cook for 10 minutes. Pour into a mixing bowl.
2. Meanwhile, bring vinegar, sugar, salt, and mirin in a saucepan. Set over medium-high heat. When mixture comes to a boil, turn off heat and let cool completely.
3. Slice prawns open like little books, lengthwise. Bring a saucepan of water to boil, then add the prawns and cook for about 3 minutes until they turn opaque. Drain and cool.
4. Pour vinegar mixture into the rice and stir for 10 minutes straight. (This helps the rice get sticky.) Then, using your hands, form the rice into rectangles, about 1 1/4 inches high, 1 1/2 inches long, and 3/4 inch wide.
5. Top rice with wasabi paste to taste, then top each with your choice of cooked prawns, tuna, squid, salmon, and/or caviar. Serve with soy sauce, wasabi, pickled ginger, and white radish.
