Ingredients
puff pastry | |
jam of your choice | |
2 large | eggs, separated |
300 ml | milk |
60 g | breadcrumbs |
100 g | caster sugar |
60 g | butter |
4 tbsp | brandy |
1 | lemon, thinly peeled rind |
Instructions
Preheat the oven to 180°C. Line a 22cm pie tin with the pastry and spread the pastry generously with jam.In a saucepan, heat the milk together with the lemon peel and the breadcrumbs. Simmer for some minutes. Take from the hob, fish out the lemon peel and add in 40g of the sugar, the butter, brandy and egg yolks. Stir until well combined. Pour into the pastry case and bake for 30 minutes.
Whisk the egg whites with the remaining sugar until stiff and glossy. Take the cake out of the oven and spread evenly with the meringue mixture. The surface should be smooth. Return into the oven and bake for another 20 minutes until golden brown.
Serve hot or warm.
