Mama s beef olives recipe details
Ingredients
4 slice(s) | topside beef, large slices, thinly cut |
100 g | streaky bacon rashers, diced |
3 large | onions, chopped |
2 tbsp | mustard |
salt and freshly ground black pepper | |
¼ l | water |
3 tbsp | butter |
2 tsp | flour |
some | single cream |
some | red wine |
Instructions
Spread the beef with the mustard and sprinkle with salt and pepper. Top with the bacon and 2/3 of the chopped onions. Roll up and secure with kitchen string. Toss in flour.Heat the butter and brown the beef olives well all around. Add the remaining onions and cook for some more minutes. Add the wine and the water, cover and cook over low heat for 30 minutes. Turn the beef olives and cook for another 30 minutes.
Arrange the beef olives on preheated serving plates, remove the string and keep warm.
Add the cream to the sauce and bring to the boil again. Cook for some minutes until slightly thickened and season to taste with salt and pepper.
Serve the beef olives with the sauce and boiled potatoes.
