Man sized grilled vegetable sandwich recipe details

Ingredients
Serves: 1- 1 zucchini, thinly sliced lengthwise
- 1 red bell pepper, quartered and seeds removed
- 1 red onion, cut into 1/2-inch slices
- 1/4 cup Italian salad dressing
- 1 (14 ounce) loaf ciabatta bread, split
- 2 tablespoons olive oil
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 2 teaspoons lemon zest
- 1 teaspoon minced garlic
- 1/2 cup crumbled feta cheese
Preparation method
Prep: 15 mins | Cook: 10 mins | Extra time: 1 hour, marinating1. Arrange zucchini, bell pepper, and onion in a shallow baking dish; toss with Italian salad dressing to coat, then cover with plastic wrap and refrigerate to marinate for 30 minutes. Drain.
2. Preheat grill to medium heat. Lay out the vegetables on the grill and close lid. Cook for about 10 minutes, flipping once midway through cooking, until tender. Transfer to plate.
3. Coat ciabatta with olive oil and toast on the grill for about 1 minute.
