Ms. Eva sends me a bottle when she makes a batch and it hardly lasts a day, It’s habit forming! You need to plan ahead and get the tomatoes salted the night before.

Ingredients
Serves: 6- 11 ripe tomatoes
- 1/2 cup kosher salt or table salt
- 1 cup chopped celery
- 1 cup chopped onions
- 6 jalapeno peppers, seeded
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup cider vinegar
- 8 ounces tomato paste
- 8 ounces chopped chiles
Preparation method
Prep: 5 mins | Cook: 15 mins | Extra time: 8 hours, soaking1. Soak tomatoes in salt in a glass bowl for 8 hours or overnight. Drain well, and do not rinse.
2. In a large saucepan, combine all ingredients. Bring to a slow boil over medium-low heat, and simmer for 15 minutes, stirring frequently.
