Instructions
My “Take Five” recipes are quick and simple and do not need more than 5 ingredients apart from basics such as oil, butter, water, sugar, salt and pepper etc. which are always and everywhere available.Peel the garlic clove and crush it, mix with salt. Mix garlic, cinnamon, coriander seeds with olive oil, squeeze the lime and add the juice to the oil, season with pepper and some more salt. Cover chicken with the marinade and let rest for about three hours. Keep some of the marinade aside.
Preheat oven to about 210 °C, coat a cast-iron skillet with some olive oil, place the chicken into the skillet with the back showing up and let fry for about 30 minutes, turn it to the other side and reduce the heat to 80°C. Insert an oven thermometer into a rather thick part of the bird (e.g. breast). Let it cook until the thermometer shows 70°C (about 2 hrs.). Coat the chicken with some marinade every 20 minutes.
Serving suggestion:Serve with some fries and a Rhine Riesling or a Sauvignon Blanc from South Africa.
