Ingredients
1 cup(s) | caster sugar |
2 large | eggs, at room temperature |
1 tbsp | smooth apricot jam |
1 ¼ cup(s) | flour |
1 tsp | bicarbonate of soda |
salt | |
2 tsp | unsalted butter |
1 tsp | vinegar |
½ cup(s) | milk |
For the sauce: | |
1 cup(s) | single cream |
½ cup(s) | unsalted butter |
½ cup(s) | caster sugar |
½ cup(s) | apricot nectar, often stocked at Italian delicatessen |
Instructions
Beat eggs and caster sugar until light and fluffy. Beat the apricot jam into the mixture.Sift the dry ingredients three times.
Melt the butter and combine with the vinegar and milk.
Fold the dry ingredients and milk mixture alternately into the egg mixture. Pour the batter into a medium-large greased, ovenproof casserole dish. Bake at 180 deg. C (350 deg F.) for 45 minutes.
For the sauce:
Melt the sauce ingredients together and pour over the pudding as soon as it is taken from the oven. Pierce the pudding with a fork to aid the absorption of the sauce.
Serve hot or cold with cream, ice-cream or custard.
About this recipe:I came across this at lunch in a wonderful vineyard in South Africa. Asked for the recipe and to my delight it was emailed to me. Fabulous pudding which tastes much better than it looks. You can use orange juice, sherry or brandy instead of the apricot sauce.
