Maltese water crackers recipe details
Ingredients
2 tsp | dried yeast |
150 ml | warm water |
400 g | plain flour |
1 pinch(es) | salt |
50 g | butter |
1 tsp | aniseed, crushed |
200 g | caster sugar |
Instructions
Sieve flour and salt into a bowl. Add the sugar and aniseed and mix well. Add the yeast and most of the water and bring together to a dough. Add more water if required. Bring the dough together and turn out to a lightly floured surface. Knead until the dough is pliable and smooth. Return to a greased bowl, cover and leave in a warm place to double in size. In view of the high proportion of sugar, this may take rather longer than expected, 2-4 hours.Preheat the oven to Gas Mark 6, 200°C, 400°F.
Knock back the dough and form into 4 elongated loaves. Place on a baking tray to rise.
Bake for about 20 minutes until cooked through. Allow to cool overnight.
Slice each loaf thinly and lay the slices out on a tray.
Preheat oven to Gas Mark 4, 180°C, 350°F.
Bake for a few minutes until crisp and golden, ensuring that they neither brown excessively or burn.
Remove and allow to cool on a wire rack.
