Ingredients

1 l chicken stock
4 slice(s) fresh ginger, peeled
1  bay leave
2  celery hearts, thinly sliced
4  green onions, including tender tops, cut into strips on the diagonal
2 head(s) Belgian endive, cut into quarters lengthwise
salt and fresh ground pepper to taste
2 tbsp fresh chives, chopped
4  chicken breast halves, skinned and boned

Instructions

Pour the stock into a saucepan and place over medium heat. Bring to a boil, reduce the heat and simmer for 2 minutes to concentrate the flavour.

Cut the ginger slices into thin strips and add them to the pan with the bay leaf and celery hearts. Simmer for 5 minutes.

Add the chicken breast, green onions and endives and cook until the chicken is tender, 12-15 minutes. Season to taste with salt and pepper. Discard the bay leaf. Place each chicken breast half in an individual bowl.

Divide the ginger and vegetables among the bowls and add a few tablespoons of the broth.

Garnish with the chives. Serve with wild rice.
