Malaysian chicken breast recipe details
Ingredients
1 l | chicken stock |
4 slice(s) | fresh ginger, peeled |
1 | bay leave |
2 | celery hearts, thinly sliced |
4 | green onions, including tender tops, cut into strips on the diagonal |
2 head(s) | Belgian endive, cut into quarters lengthwise |
salt and fresh ground pepper to taste | |
2 tbsp | fresh chives, chopped |
4 | chicken breast halves, skinned and boned |
Instructions
Pour the stock into a saucepan and place over medium heat. Bring to a boil, reduce the heat and simmer for 2 minutes to concentrate the flavour.Cut the ginger slices into thin strips and add them to the pan with the bay leaf and celery hearts. Simmer for 5 minutes.
Add the chicken breast, green onions and endives and cook until the chicken is tender, 12-15 minutes. Season to taste with salt and pepper. Discard the bay leaf. Place each chicken breast half in an individual bowl.
Divide the ginger and vegetables among the bowls and add a few tablespoons of the broth.
Garnish with the chives. Serve with wild rice.
