So spicy, it needs a month in a cupboard before it’s ready to eat.

Ingredients
Makes: 4 cups- 2 to 3 tablespoons ground cayenne pepper, to taste
- 3 cups sugar
- 3 cups white vinegar
- 3 tablespoons salt
- 1 1/8 cups golden raisins
- 2 tablespoons chopped garlic
- 2 tablespoons fresh ginger, chopped
Preparation method
Prep: 30 mins | Cook: 15 mins | Extra time: 30 days, curing1. Combine all ingredients in a saucepan and place over medium-high heat. When the liquids come to a boil, turn heat down to low.
2. Cook at a low boil for about 15 minutes, then turn heat off. Let stand for about 5 minutes.
3. Pulse sauce in a blender or food processor until smooth. Pour into hot, clean glass bottles and seal well.
4. Store the bottles in a cool place where they won’t be touched by sunlight. (The refrigerator is too cold, try a basement or closet.) Wait for 4 weeks, then the hot sauce will be cured enough to eat. Serve over any Asian meat dish or soup.
