You’ve had gnocchi–small potato dumplings–in Italian restaurants, now try making ’em yourself.
Ready in: 20 mins

Ingredients

Serves: 4
  • 2 cups mashed potato flakes
  • 1 1/2 cups boiling water
  • 2 eggs, beaten
  • 1 1/2 cups flour, plus extra for the work surface
  • 1/4 teaspoon salt

Preparation method

Prep: 15 mins | Cook: 5 mins

1. Combine potato flakes and water in a mixing bowl. Stir well, then whisk in the eggs. Stir in flour and salt.
2. Sprinkle some flour on a cutting board. Roll out 1/4 of the gnocchi dough into a 3/4-inch cord, then use kitchen scissors or a sharp knife to cut into 3/4-inch dumplings. Repeat with remaining gnocchi dough.
3. Bring a large pot of salted water to boil. Cook some of the gnocchi in the boiling water for about 1 minute, or just until the gnocchi float to the surface; use a spoon to transfer cooked gnocchi to a bowl. Repeat with remaining gnocchi.
4. Serve.
