Ingredients
1/2 cup butter, softened
3 cups Krusteazoat bran muffin mix
1 cup quick cooking oats
3 cups fresh raspberries plus 1 cup sugar (may substitute 1 cup raspberry jam)
1/2 cup chopped nuts
Instructions:

We use raspberries as a staple in our kitchen. Raspberry vinegar, syrup, sauce, butter, jams, and jellies are always in the cupboard or freezer.

The other fresh item I have in winter and summer is mint. We have lemon, chocolate, spearmint, peppermint, and apple. These must all be grown separately, as cross-pollination can take place. All but the spearmint and peppermint have been rather disappointing as flavors for the kitchen , so they are kept as conversation pieces and are lovely plants. The spearmint and peppermint, however, are always available as garnish, and we encourage our guests to eat the garnish, as it aids in digestion and leaves the mouth tasting good! We dry both raspberry and mint leaves for tea for our guests.

If not using jam, microwave raspberries and sugar for 2 minutes. Cool. Place butter, muffin mix, oats, and chopped nuts in medium bowl and mix with a spoon until blended. Press 1/2 of the mixture evenly and firmly into the bottom of a greased 13 x 9 x 2-inch baking pan. Spread raspberries (or jam) on crumb mixture; press firmly to make top even. Top with remaining crumb mixture and press firmly. Bake 25 to 30 minutes, or until top is lightly browned, in a preheated oven. Do not overbake. Cool completely. Cut into bars.

Makes: Fifty-four 2 x 1-inch bars
