- Ingredients
- 2 chicken breasts, boneless and skinless
- 2 Tablespoons of butter
- 1/4 cup of chopped onions
- 3 Tablespoons of raspberry jelly
- 1/2 cup fresh blackberries
- 3 Tablespoons of apple-cider vinegar
- 1/4 cup heavy cream
If blackberries and red raspberries are very abundant in your area you can gather the fruits required for this recipe on your own. Freeze the berries whole to use year round. In this recipe you can easily substitute fresh raspberries for frozen thawed berries. Thawed berries are soft and drizzly after they warm up, but they still contain all the sugars and flavors from the fresh berries.
1. Cut chicken breasts in half. Saute in butter for about 5 minutes over medium heat, then turn chicken.
2. Add onion and cook until tender, about 5 minutes more. Remove chicken and keep warm.
3. Add jelly, blackberries, and vinegar. Scrape pan and stir. Boil 1 minute to slightly reduce liquid.
4. Add cream and heat.
5. Pour sauce over chicken.
Serves:4.
