Mad scientist's blueberry syrup recipe details
Absolutely perfect blueberry syrup, because you cook it to an exact temperature like a lab tech. You’ll need to snag a candy thermometer for this one.

Ingredients
Makes: 3 cups- 4 cups blueberries
- 2 thin strips lemon zest
- 3 cups water
- Cheesecloth
- 3 cups sugar
- 1 tablespoon lemon juice
Preparation method
Prep: 10 mins | Cook: 15 mins1. Place berries in a saucepan and mash with a large spatula. Stir in lemon zest and 1 cup water, and set over medium heat.
2. When mixtures comes to a low boil, turn heat down to low and cook for 5 minutes. (Don’t let the mixture keep simmering during these 5 minutes, you’re just barely cooking the berries.)
3. Place a square of cheesecloth in a colander and place over a mixing bowl.
4. Drain the saucepan of berries through the cheesecloth into the mixing bowl. Press the berries into the colander sides to get as much juice out as possible. Throw out the blueberry solids.
5. Stir 2 cups water and 3 cups sugar together in a saucepan set over medium heat. When mixture comes to a boil, place a candy thermometer into the saucepan and stop stirring. Let cook until the syrup reaches 260 degrees F.
6. Stir in blueberry juice. Return to a boil and cook for 1 minute, then turn off heat. When the mixture is cool, stir in lemon juice. Serve.
