Macaroni Cheese recipe

|200 g||freshly grated Cheddar cheese|
|salt and freshly ground black pepper|
|300 g||macaroni, broken in approx. 4cm pieces|
Cook the pasta in salted water until al dente. Drain.
Melt 2/3 of the butter and dust with the flour. Cook stirring for a minute. Add the milk and bring to a boil, stirring constantly with a wire whisk. Simmer for some minutes, stirring frequently. Stir in the Cheddar cheese and cook until melted. Season to taste with salt and pepper.
Preheat the oven to 180°C. In a casserole dish, mix together the macaroni and the sauce. Sprinkle with the breadcrumbs and divide the remaining butter in flakes on top. Bake for 20-30 minutes until golden brown.
