A long soak in a habanero-infused marinade gives these steak skewers a big kick.
Ready in: 8 hours 15 mins

Ingredients

Serves: 4
  • 1 cup soy sauce
  • 1 cup sugar
  • Juice and zest of 2 limes
  • 1 tablespoon grated fresh ginger
  • 4 cloves garlic, crushed
  • 1/4 cup chopped cilantro
  • 4 dried habaneros, crushed
  • 1 pound tri-tip steak

Preparation method

Prep: 10 mins | Cook: 5 mins | Extra time: 8 hours, marinating

1. Put soy sauce and sugar in a saucepan over low heat. Cook until the sugar melts. Take off heat and add lime juice, lime zest, ginger, garlic, cilantro, and habanero. Let cool.
2. Cut steak into long, 3/4-inch wide strips. Add strips to marinade, stir well until meat is coated. Cover and refrigerate at least 8 hours.
3. A few hours before you’re ready to grill, soak bamboo skewers in water. This will prevent them from burning. Then preheat grill to hot and lightly oil grate.
4. Thread steak onto skewers, and pu skewers on grill. Cook for 5 minutes or until browned, turning several times and coating with marinade throughout.
