Macaroni and Broccoli Cheese recipe

Ingredients
120 g | macaroni |
1 tbsp | butter |
1 tbsp | plain flour |
300 ml | milk |
100 g | freshly grated red Leicester cheese |
salt and pepper | |
nutmeg | |
100 g | broccoli, in florets |
1 tbsp | breadcrumbs |
butter, in flakes |
Instructions
Cook the macaroni in salted water until al dente.In a saucepan, heat the butter. Add the flour and cook stirring until pale yellow. Add the milk and cook stirring with a wire whisk until the sauce thickens. Switch the heat to low and simmer for a couple of minutes, stirring frequently. Take the pan from the heat and stir in half of the cheese. Season to taste the sauce with salt pepper and nutmeg.
Blanch the broccoli in salted water until done, but still a bit firm to the bite. Drain macaroni and broccoli.
Preheat the oven to 200°C.
Divide the broccoli on the bottom of a buttered casserole dish. Cover with the macaroni and pour over evenly the cheese sauce. Sprinkle with the remaining cheese and the breadcrumbs and finally put butter flakes on top. Bake until golden brown.
Serve with fresh green salad.
