Ingredients

Serves: 2
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 cup finely chopped macadamia nuts
  • 1/4 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 2 tilapia fillets (6 oz. each)
  • 2 tablespoon canola or olive oil
  • 1/4 cup Thai peanut sauce

Preparation method

Prep: 15 mins | Cook: 10 mins

1. Place flour in a shallow pan and the egg in a separate pan. In a third, stir together the nuts, bread crumbs, cheese, and garlic powder.
2. Brush both sides of the fillets with flour, then dunk in the egg mixture, and finally dredge in the nut and bread crumb combination.
3. Pour oil into a large skillet and place over medium heat. Cook tilapia in hot oil for about 5 minutes on each side, or until fish is cooked thoroughly. Drizzle with peanut sauce and serve.
