Lukewarm tomato salad recipe details
Ingredients
150 g | freshly grated Parmesan cheese |
salt and freshly ground black pepper | |
3 | shallots, chopped |
750 g | cherry tomatoes |
4 sprig(s) | basil, chopped |
4 tbsp | olives |
8 slice(s) | Parma ham, halved |
3 tbsp | olive oil |
2 tbsp | balsamic vinegar |
1 tsp | honey |
Instructions
Preheat the oven to 150°C. Sprinkle the Parmesan cheese in rounds onto a lined baking tray. Form about 12 rounds. Bake until golden and melted. Remove from the baking paper with a spatula and allow to cool on a rack.Heat the oil and fry the shallots and the tomatoes for 4-5 minutes. Pour in the vinegar and cook for 1-2 minutes. Stir in the honey, basil and the olives. Season to taste with salt and pepper.
Serve the tomato salad with the Parmesan rounds, the Parma ham and fresh white bread.
