Louisiana catfish recipe details
Ingredients1. Catfish fillets, lightly seasoned with salt and pepper (4 about 5 to 8 oz)
2. soy sauce (1tbsp)
3. burgundy wine (2c)
4. salt (to taste)
5. ground red pepper (to taste)
6. peeled and chopped fresh tomatoes (4c)
7. chopped garlic (1tbsp)
8. olive oil or peanut oil (2tbsp)
9. chopped parsley (1c)
10. chopped onion (1c)
Method of preparation
1. Take a saucepan, place it over heat. Heat oil in it and add chopped parsley and onions in it and then saute them for about 3 to 5 minutes. Except fish fillets, add the remaining ingredients in the pan and cook them for about 10 minutes until onions become soft.
2. Take off the pan from heat and keep it aside. Now place fish fillets on medium hot grill with skin side up and then grill them for about 3 minutes. Then turn the side of the fillets and grill them for 2 minutes.
3. Remove the fish fillets and place it in aluminum foil and then keep it on a grill-safe pan, over the grill and then spread the prepared sauce over it. Cook it for 10-12 minutes. Take off the pan from grill and serve hot fish in serving dish.
