Grilled achiote marinated chicken breast recipe details
This is the most popular meal requested by my family. I can almost guarantee this recipe will be served at all of our parties. Why can’t I just make hamburgers once in a while? The achiote paste can be obtained at most Mexican Specialty stores and some supermarkets. This recipe can be doubled or tripled with the exception of the cinnamon. When doubled, I usually add about 1.5 times the amount.

Ingredients
Serves: 12- 3 pounds chicken breast, boneless
- 2 tablespoons lemon juice, fresh
- 9 ounces orange juice
- 1/2 teaspoon ground cinnamon
- 2 tablespoons Chef Merito(R) adobo seasoning
- 3 cloves garlic clove, minced
- 1 teaspoon dried basil leaves
- 2 tablespoons achiote paste
- 2 tablespoons white vinegar, or any vinagar
- 1/2 teaspoon black pepper
- 1/3 cup oil
Preparation method
Prep: 4 hours 10 mins | Cook: 15 mins1. Combine all ingredients except chicken breast. Thoroughly mix the ingredients in a blender.
2. Pour mixture over chicken,reserving about 1/4 cup. Cover and refrigerate 4 hours or overnight. Remove chicken from marinade.
3. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
4. Grill chicken breast 5 to 6 inches from medium-hot coals for 2 to 3 minutes. Turn chicken. Continue grilling, turning and brushing with reserved marinade 2 or 3 times, until done, about 10 minutes longer. The marinade will burn if stayed on the grill too long. Remove and let chicken rest for 10 minutes. Do not over-cook the chicken or they will be dry.
5. I usually feel the thickest part of the chicken breast to let me know when they are done. The chicken will feel firm.
