Ingredients
1 | whole chicken, plucked & dressed ( about 2 kg) |
4 liter(s) | water |
salt | |
1 stalk(s) | leek, cleaned |
1 stalk(s) | celery, cleaned |
1 large | carrot, clened |
4 | cloves |
2 | bay leaves |
2 large | onions, peeled and cut in half |
6 tbsp | butter |
4 tbsp | flour |
1 pinch(es) | nutmeg, freshly ground |
2 tsp | Worcestershire sauce |
60 ml | white wine |
2 tsp | lemon juice |
2 tbsp | capers, drained & rinsed |
1 | egg yolk |
5 tbsp | heavy cream, whipping |
Instructions
Fill 8 quart pot with about 4 liters of water. Add salt, leek, celery, carrot, whole clove, bay leaf and onion; bring to boil. Insert whole Chicken; bring again to boil.Boil for about 10 minutes, shut off heat, leave covered pot on burner for about one hour. The chicken will be cooked perfectly every time, regardless of size.
After one hour proceed as follows:
Remove chicken from cooking liquid; cool slightly. Remove skin and fat; cut flesh from bones in bite-sized pieces. Strain liquid.
Melt butter in a large skillet; stir in flour; stirring constantly, cook until golden brown, about 3 or 4 minutes.
Add hot cooking liquid in small amounts until sauce reaches desired consistency; then season with salt, nutmeg, Worcestershire sauce, wine and lemon juice.
Place chicken pieces and capers in sauce; warm gently over low heat.
When all ingredients are hot, turn off heat; let stand 5 minutes.
Before serving, blend egg yolk and whipping cream in a small bowl. Stir egg yolk mixture into sauce to make it smooth and rich.
Serve hot over rice or pasta.
Note:
The meatless carcass may be cooked a while longer in the remaining liquid to make a delicious chicken soup.
