I got bored one day and had some SPAM(R) and eggs. I was tired of making them my normal way of scrambling eggs and adding spam to them, so I came up with this idea and decided to mix it with a little heat… Because I love spicy food in the morning!

Ingredients
Serves: 4- 1 (12 ounce) can SPAM(R)
- 4 eggs, poached and kept warm
- 1 cup Hollandaise sauce
- 1/4 tsp cayenne
- Salt and pepper, to taste
- 4 English muffins
- 4 slices of cheese, whatever kind you’d like
Preparation method
Prep: 5 mins | Cook: 15 mins1. Place SPAM(R) in skillet and fry over medium heat for about 8 minutes.
2. Meanwhile, toast muffins and stir salt, pepper, and cayenne into Hollandaise sauce.
3. When muffins are toasted, place SPAM(R), egg, slice of cheese, and hollandaise sauce on each half.
