Ingredients

1 large can(s) kidney beans, drained
1 large can(s) corn, drained
1  onion, chopped
2  bell peppers, red and green, diced
2  spring onions, diced
3 tbsp olive oil
3 tbsp lemon juice
salt and pepper
fresh parsley, chopped

Instructions

In a bowl, mix together all vegetables. Mix in the oil. Season to taste with lemon juice, salt, pepper and parsley.

Serve with toasted bread.
