|1 large can(s)||kidney beans, drained|
|1 large can(s)||corn, drained|
|2||bell peppers, red and green, diced|
|2||spring onions, diced|
|3 tbsp||olive oil|
|3 tbsp||lemon juice|
|salt and pepper|
|fresh parsley, chopped|
In a bowl, mix together all vegetables. Mix in the oil. Season to taste with lemon juice, salt, pepper and parsley.
Serve with toasted bread.
