Ingredients
1 large can(s) | kidney beans, drained |
1 large can(s) | corn, drained |
1 | onion, chopped |
2 | bell peppers, red and green, diced |
2 | spring onions, diced |
3 tbsp | olive oil |
3 tbsp | lemon juice |
salt and pepper | |
fresh parsley, chopped |
Instructions
In a bowl, mix together all vegetables. Mix in the oil. Season to taste with lemon juice, salt, pepper and parsley.
Serve with toasted bread.
